Rubiales is a municipality in the province of Toledo, in the Autonomous Community of Castilla-La Mancha, Spain, located on the banks of the Tahoe River, about 30 kilometers from the capital city of Toledo. The town, with a population of less than 1,000 people, has olive cultivation and traditional olive oil production as its core industries, and is surrounded by olive groves that form a typical landscape of the La Mancha countryside.
The history of Rubiales dates back to the Moorish period, and its name derives from the Arabic word "Rubayrat", meaning "small palace complex". The 15th century Church of the Assumption of the Virgin Mary and the old stone bridge remain in the town, demonstrating the fusion of Christianity and Moorish culture. During the traditional festival in August, the inhabitants hold open-air dances and culinary specialties, especially dishes made with local olive oil.
The town is located on the Tahoe River impact plain and the Mediterranean climate provides ideal conditions for olive cultivation. In addition to its dominant olive oil industry, Rubiales has developed a rural tourism industry, where visitors can visit olive oil workshops, hike the ecological routes of the river valley, or visit the nearby World Heritage city of Toledo.
